Paalappam

Palappam is usually served with a range of side dishes like vegetable stew or chicken stew, sweetened coconut milk, Kerala egg curryegg roast, korma, kadala curry etc.

Do try this delicious Palappam for your breakfast.

Ingredients

  • Raw rice (white) – 3 cups
  • Cooked rice – 2 cups
  • Grated coconut – 1 cup
  • Sugar – 3 tbsp
  • Yeast – 1 tsp
  • Salt to taste
  • Thick coconut milk - 1 cup
  • Luke Warm Water - 1/4 cup

Method

Step 1

Soak rice in water for a minimum of 5 hours.

Step 2

Grind raw rice, cooked rice and grated coconut to a smooth paste with thick coconut milk. In the luke warm water add yeast and dissolve it well. Add this yeast, salt and sugar to the batter and mix well.

Step 3

Cover it and keep aside for fermentation for 6 hours.

Step 4

Heat a non-stick pan (appachatty) and pour 1 ladle full of batter, lift the pan and rotate it to spread the batter, cover and cook over medium heat .

 chop the items very very finely as the ingredients have to blend with chicken and also give their flavours. 
Ingredients:-

Chicken-cut into 6 pieces
Chopped onion:-1no small
Chopped ginger:-1 inch
Chopped garlic:-4 pods
Chopped green chillies:-3no.

Pepper:-1/2 tsp
Cornflour:-4 tbsp
Red colour:-1 pinch
Oil for frying
Chopped coriander:-2tbsp
Lemon juice:-1tbsp
Soyasauce:-1tsp
Red chilli paste or chilli flakes:-1tsp or more
Egg:-1no.
Maida:-2 tbsp
Water:-3tbsp
Salt for taste

Method:-In a bowl, add all the ingredients and make a batter except chicken. Mix well and apply well on chicken pieces. Check the spices again.marinate 4 abt 4 hrs.
Heat oil n before adding the chkn mix it well as the cornflour tend to settle down.fry the chkn in high flame for 2 min n then in low flame till its crispy..very tasty chkn fry ready..:)
I gt this recipe frm a chef.n the same rcp cn be used to make chkn lollipop.
Sweet red chilli sauce mixed wth mayonnaise cn be used as a dip..

3/4 cup strong brewed cold coffee
1 cup sugar
1/2 cup chocolate syrup
8 ounce cream cheese(1 pack)
2 cup heavy whipping cream
100 gm toffee covered with chocolate chopped(2 bar)

arrange cake slices on bottom of a rectangular dish.
drizzle coffee over cake.
beat sugar, chocolate syrup and cream cheese in a large bowl with a mixer on medium speed until   whipping cream beat on medium speed until light and fluffy .
spread over cake.
sprinkle with chocolate covered toffee .
cover and refrigerate for at least one hour.

Sugar,veg.oil,wheat flour/maida,carrot finly choped .
Baking powder-3/4 tspn
In a mixi beat egg,sugar,carrot n oil.pour it to a bowl slowly add wheat/maida flour n baking powder,stir well with spoon...
In a cooker apply ghee n pour the mixture.close the lid without vessel.
Time 45 mins to 1 hour
Toping nutella mixing with lil milk...
Here i made with wheat.flour

Instead of carrot can add dates,apple,banana etc

Sugar 1cup
Vanilla essence
Maida or Atta 1 cup
1/2 tsp bi carbonate of soda n baking powder 1tsp
Mash all the banana n mix it with the melted butter I/2 cup
N eggs n the dry ingredient s n bake for 25 min
Finally part if the baking u can add the Chico chips if u like them
Bananas should be really ripe though

Dates chutney

Dates 10 seeds removed
One lemon size puli
Add lil water red chilly powder and salt and boil
Till dates become very soft and tender. Remove from heat and allow it to cool.
Grind in mixi and make it paste.
Add very very finely chopped Onion green chilly coriander leaves to this paste and ur dates chutney is ready

Momos chilli sauce
1/4 cup garlic cloves
12 dried red chillies
1/2 tbsp sugar
1/2 cup malt vinegar
1 tbsp vegetable oil

Directions
peel garlic cloves
soak red chillies in vinegar for one hour
now put all ingredients in a blender to make a smooth paste.
Ready to serve with Momos.

IEgg boat:    2 long bread rolls  slit in the middle
3 eggs
3 tbs milk
1 cup cooked sausage or pcs of meat (optional) 
2 tbs green onion chopped

mix eggs,milk sausage,onions,cheese n snp together ,slit the rolls and take out the middle ,pour the egg mix in the rolls and place in the oven to bake till egg is cooked ,serve with a side salad or as is .

100% whole wheat bread

100% whole wheat bread

Atta - 3 cups
Yeast - 1 tsp
Salt
Sugar - 1 tbsp
Yogurt - 2 tbsp
Butter - 2 tbsp
Water  - 1 to 1.25 cup

Set aside 1 cup lukewarm water, yeast and sugar to bubble.

In a bowl, whisk the flour and salt.
Add the yogurt and butter and mix it with the flour.
Add the yeast mix and knead everything to get a slightly sticky mixture. ( May need more water. The dough should be slightly loose than chapathi dough. Not very very sticky) 
Brush water all over the dough.
Cover and keep to rise. It takes 1 hour for the rise. Wait patiently.

After it rises, punch the dough and lightly knead it. Shape into a log and place in the loaf pan.
Mark a criss cross on the top (Donno why the recipe asks for it)
Cover and let it rise for max 45 min.

Brush with milk and bake for 30 min at 180 C.

Marinate & keep aside :
chicken (boneless strips) 400gms
Light soya sauce 1 tbsp 
Salt to taste

Gravy ingredients :
Onion 1 med (thick slices)
Green Capsicum 1 (thin strips)
Red capsicum 1/2 (thin slices)
Yellow capsicum 1/2 (thin slices)
Ginger 1" piece (chopped)
Garlic 3-4 cloves (chopped)
Green chilli 3-4 (cut diagonally) 
Oyster sauce 2 tbsp
Sugar 1tsp
Chilli sauce 3tbsp
Corn flour 2tbsp
Chicken stock 1cup
Oil 4tbsp
Pepper corns 1/2tsp (crushed)

* mix oyster sauce, sugar, chilli sauce, corn flour in 1cup of chicken stock and keep aside
* heat oil in a pan and add ginger, garlic n green chilli. Sauté 
* add marinated chicken strips, sliced onions, capsicums and continue to stir fry for 2-3mins
* stir in the chicken stock mix n cook on high heat for 2mins tossing and stirring continuously
* sprinkle crushed pepper corns
(Use soya sauce as a substitute for oyster sauce)

Coconut milk -1bowl(thick)
Dip the bread in coconut milk and set in baking dish as 1st layer
Prawns 1 cup
Onion-1
Tomato-1 
Ginger garlic paste -1tsp
Corriander leaves
Salt
Marinate prawns in red chilli pwd corriander pwd and salt fr  1/2 an hr
In a pan pour oil and add onion , gin garlic paste and sauté fr few mints then add tomato and make thick masala then add marinate prawns and cook till prawns is done then add coriander leaves
(Masala should be thick do not add water)
Set the prawn masala as 2nd layer 
Again Dip the bread in coconut milk and set in 3rd layer

Maida -1tbsp
Butter-2tbsp
Milk-1cup
Pepper-1tsp
Maggi chicken cube -1
 Make a white sauce out of this and pour as 4th layer
Then on top layer add mozarella cheese ,chilli flakes nd oregano and bake in oven fr 15 to 20 mins at 170०c

Umm - Ali or ummali

New version of  Umm Ali

1/2 kg puff pastry  sheet frozen ( I used croissants, baked croissants broken up is actually widely seen!)
3tbsp + 5tbsp sugar
6tbsp milk maid
2 tbsp shredded coconut
475 ml thick cream (nestle)
 2 cups milk (depending on how thick or loose you want your pudding to be)
1/4 cup each almonds and pistachios chopped
Few brown sugar for sprinkling on top

1.  Preheat oven to 450º F.
2.  Unroll puff pastry sheets and place on greased baking sheets.  Bake until dry and crisp, but not brown...approximately 45 seconds each. When finished with puff pastry, turn oven down to 350ºF. 
3.  Break puff pastry into 1-2in. pieces. Add this to a medium sized casserole dish.
 To that add in the coconut, almonds and pistachios. Spread it evenly.
3. Boil milk, condensed milk and 3tbsp of sugar in a separate pan. Pour this over the bread mixture. Let the bread soak up the milk for 10 mins.
4. Beat 5 tbsp of sugar with thick cream and spread this on top of the bread plus milk mixture.
5. Sprinkle a few brown sugar on top.
6. Bake for 15 mins at 175 degree celsius.
7. Chill for at least 4-5 hrs.
Notes:

✔Check for the sweetness and adjust the sugar and the condensed milk amount accordingly.
✔This dessert tastes its best when really cold.

I used croissants Instead of puff pastry sheet , baked croissant use cheythittum nannayittund
**skip steps 1 & 2 if using already baked croissants**

Chettinadu Fish Fry

Ingredients
2 fillets king fish,2 Tbsp oil,to pan fry
For the  marination:
 7-8 cloves garlic, 1 knob ginger, mashed
1 tsp cumin, 1 tsp fennel
2 tsp coriander seeds, 2 tsp black peppercorns
1/2 tsp mustard seeds, 9-10 curry leaves, Salt, to taste
1 tsp oil, to grind
1 Tbsp water
1/2 tomato, chopped, 1 Tbsp water
1 tsp red chilli powder, 5 tsp tamarind extract, 1 Tbsp cornflour, to sprinkle
Method
In a pan, dry roast garlic, ginger, cumin, fennel, coriander seeds, black peppercorns, mustard seeds & curryleaves.Pound them in a mortar and pestle. Add a little salt, oil and water to help in the procedure.
Now add the chopped tomato, turmeric powder, red chili powder, salt and tamarind extract. Pound them together till pulp like and spread it over the fish pieces. Sprinkle some cornflour over the fish. The cornflour helps the masala to stick . Marinate the fish and keep in the fridge for 15-20 minutes. In a pan, fry the fish with the refined oil and serve hot.

Ingredients for Chicken Kulfi Kebab
Chicken - 500gms
Hung Curd - 1/2 cup
Thick Cream - 1/2 cup
Cashew nuts - 15
Green Chilies - 3
Ginger Garlic Paste - 1 tsp
Milk - 1/4 cup
Processed Cheese - 1/2 cup
Mozzarella Cheese - 1/4 cup
Pepper powder - 1/2 tsp
Red Chili Flakes - 1/4 tsp
Salt to taste
Aluminum Foil for baking
Method:
1. Wash Chicken and cut into desired pieces and poke it
with fork and keep aside.
2. To make cashew paste - soak the cashew nuts in milk for
half hr. Later grind it into smooth paste.
3. In a bowl add all the ingredients - hung curd, cashew
paste, thick cream, processed and mozzarella cheese,
green chilies, ginger garlic paste, red chili flakes, pepper
powder, and salt.
4. Add chicken pieces to the above marination and marinate
for 3 to 4 hrs.
5. After the Chicken is marinated take aluminum foil and
wrap the chicken pieces like you wrap a chocolate.
(Sounds fun!!!)
6. Pre heat the oven at 220 degree Celsius for 10 mins and
bake the chicken for 25 to 30 mins at 200 degrees.
7. OMG... your delicious kulfi chicken is now ready to serve
hot with Salad and Soup.
